Thinking of delicious, fast and easy breakfast?
This recipe only needs 2 ingredients and you can call them “paleo pancakes”, but if you want you can go as fancy as you wish, all you need is already in your kitchen anyway, and basically anything you add just make them better according to your personal taste, but nothing extra is necessary.
So, bananas and eggs! I’m crazy about bananas, they replace sugar and butter, sure, bananas have sugars and carbs and many “diets” forbidden them, but this is not part of being in a diet, is part of eating real and clean foods that won’t mess with your system. No labels with ingredients you can’t even pronounce and if you can most of the times you won’t know what they are or mean.
If you have checked my other posts already, you may think I have no consistence, because sometimes is all sugar, but listen, I just like to bake and cook and experiment, so if everything goes on moderation you can have fun trying different things… or giving them away (like I do with my baking tests hahaha).
Back to business… All you need is one egg per every banana. Smash the banana and then add the eggs and mix, add a pinch of cinnamon for extra flavour. I personally love chocolate pancakes, so I add to this mix a tablespoon of unswetened cocoa powder, and OMG! it is amazing!
If you need some extra texture or make them somehow ticker, heavier pancakes add 1 to 2 tablespoons of oats or almond flour, and just like a pancake, add the mixture into an already warmed pan. I always use a little bit of coconut oil so they don’t stick to the pan, and doesn’t affect this whole healthy thing we have going on.
Once they are cooked enough to flip just procede as you would with regular pancakes. And serve! This mix makes 2 pancakes, so double or triple according to your needs… When I’m making many I just heat the oven at 200 and keep the pancakes warm in there.
Toppings fan? I love to use Plain greek yogurt, maple and berries! but like I’ve already said, this recipe allows you to get as creative as you want. Enjoy!
I had never had a banana pancake until recently. A local Jamaican eatery in my town started serving breakfast on Saturday mornings. Her banana pancakes are the best! I’ve been searching for a recipe to try myself. Thanks for posting.
