Good News everyone, almond cheesy waffles are actually Low carb waffles! Yes you heard me right, they are full of protein and deliciousness, but not too many carbs. As I’ve mentioned before, I love breakfast, breakfast is maybe my favourite meal, and when the best meal of the day meets a low carbs opportunity that tastes this good, it’s just a closed deal.
You’ll only need a few ingredients, and remember these are the ratios that worked for me, maybe because of personal taste, but please go ahead and tweak them as you feel they fit your needs. I used:
- 2 eggs
- 1/3 cup almond flour (ground almonds, almond meal… they’re all the same)
- 1/2 to 3/4 cup of grated cheese
- Splash of milk (I used almond, you can use any you prefer)
- Pinch of salt
The process is pretty simple, imagine you’re making scrambled eggs! just mix in everything 🙂 start with the salt and eggs to make sure the salt is evenly distributed, then add the almond, followed by the cheese, and this is when you’ll know how thick the mix is, if it is too thick it will take longer to cook and will probably be a little too dense (aka not so fluffy), but do not worry, add a little splash of milk and mix, and if it needs more just keep going, but remember to do this by tiny increments, if you water down too much your mix it will run out of the waffle maker.
Finally make sure your waffle maker is warmed up and pour your mix in, close it and try to resist until you have your whole batch done! This recipe made me 4 waffles, but as you can see my waffle maker is pretty tiny. Serve with a side of berries and plain Greek yogurt.
