Welcome Beer loves, hope you enjoy my version of the beer cake and learn how to make a beer cake all by yourselves, is pretty simple and you can make it as big or as little as you wish. Spoiler alert, is not beer flavour, sorry but I haven’t explored that path yet haha
I made 4 – 4.5″ marble cakes… I love marble cake, it’s sooo good, and also this version of it has a very steady consistency and since I was planning on making a tall cake, seemed like a good call. The filling was maple (you know how some people use simple syrup to keep the cake moist? Well, Maple is 1000 times better), chocolate buttercream and skor pieces for some extra crunch.
To crumb-coat I used the same chocolate buttercream from the filling and to cover and decorate this lovely beer cake it was Swiss meringue buttercream, I love working with SMB because of how beautiful and painless is to work with, it doesn’t melt quick and keeps beautiful shapes for longer, the process of making it takes a bit longer, but that silky result makes it worth it, also, after you make your first 3 batches it just comes natural 😉
As you can see, the building process is pretty straight forward: leveled layer of cake, maple, buttercream, skor pieces and repeat!… I didn’t level the top layer of cake, just wanted to use that dome in my favor. Crumb-coat and then send to the fridge for a few minutes to set (or just pop in the freezer for 10min). Tall skinny cakes tend to move and unaligned a lot, so it’s better if the cake es cool and had some time to settle.
Once cool, I started to cover with yellow buttercream, and to make this colour I used a lot of yellow, some orange and a tiny bit of brown. I made it the night before decorating and initially wasn’t so sure about the colour I got, but the following day it was so much deeper and richer and bold… Perfect! Remember to set aside plain white buttercream for the beer foam.
I forgot to mention that the day before building I also pre-made the fondant handle, you know I don’t like Fondant, but when is for pieces of decoration, of course it makes sense to use it.
After the coat of buttercream looks smooth and even, send to the fridge for another 10 to 15 minutes, the next step is carving the cream to give this beer some shape. To carve the lines of the beer glass, is important to distribute them evenly, for this I made guides on top of the cake dividing it in diagonals (like a pizza), then with the little offset spatula just start working on the lines, remember to do it slow so you can see how far you can go without exposing the cake, soft repetitive moves are the way to go. once the shape is good
Finally, to give some volume and realism, I painted some details with some coper food colouring and insert the glass handle, to which I previously inserted toot-picks. And voilá, easy and beautiful cake that will definitely make somebody really happy!
