Saint Patrick’s came and so did our hosting spiring… that shows up every now and then.
I’ve never been in the parade, and I’ve been here for 3 1/2 years now, so come on, it’s time to go see what they talked about so much…
We hosted a little breakfast with friends before heading over to the parade, we’re not too far from downtown, so even if breakfast was going to be “early-ish” for a Sunday morning, we wouldn’t have to rush and stuff our faces before head to the parade 🙂

I made this amazing crustless mini-quiches… and Hey I’m only saying amazing because that’s what I heard from the kitchen crowd. Saint Patrick’s it’s all about Green stuff right? So spinach quiches they were.

Let’s get to business, they’re super easy to make, they’re mostly on the healthy side, and they’re full with protein, so much good inside these little things. You’ll need:
  • 3 eggs
  • 3 egg whites
  • 2 Cups of greeted cheese
  • 1 Cup of milk (I normally use almond or cashew, just because I don’t drink regular milk)
  • 1 Cup chopped spinach
  •  1/2 Cup chopped onions (I used red)
  • 1/2 Cup of ham in little cubes
  • 1 Tbsp olive oil
Preheat the oven at 350degrees.
Cook the onions in the olive oil with a pinch of salt and a little bit of your favourite seasoning (seasoning optional), until they get soft and a little tan. Little advise, before chopping them, put them inside a plate filled with ice cold water, and you won’t cry as much haha.
Grease your molds, not too much, we’re just trying to avoid the quiches to get stick to the molds. Use coconut oil, butter, margerine, whatever your preference is, but if you use coconut oil I recommend to use the one that doesn’t smell like anything.
Beat the egg whites and eggs until you see them fluffy, add the milk, keep beating and then add 1 1/2 cups of cheese (put the remaining 1/2 cup of the cheese on the side).
Proceed to add the remaining dry ingredients spinach, ham, onions and mix well.
Pour the mix into your muffin pans, or like I did, into silicon molds to give them that cute ruffled shape. This mix was enough to make 15.
Now, remember the cheese you put on the side? Sprinkle it on top of your quiches and to the oven for 30min.
Once served I garnished with some spinach I had left, and placed them on my cake stands so everybody could take as many as they wanted, no pressure haha. The guys had them with bacon, sausages and toast on the side… and of course Irish beer.

If you don’t like ham just use any other meat of veggie to replace, this quiches are great to make with basically anything, I love to use broccoli or bacon, or both 🙃 and if you’re not having people over, they make a great option for your breakfast all week long.
